Chocolate and coconut – a winning combination in everyone’s hearts! I’ve paired these two ingredients to create a simple, nutritious, beyond easy recipe. It’s great for a post-workout bite, afternoon snack, or as a healthy dessert. These will satisfy your sweet tooth without breaking your diet plan!

CHOOSE YOUR NUT

For this coconut chocolate energy ball recipe, we used almonds! Feel free to use whatever nut you would like. Nuts are like dates when it comes to energy balls. Sometimes you will find that some nuts (cashews, almonds, hazelnuts, etc.) are more oily than others. Just be careful to not over blend the nuts you use in the food processor. Sometimes, if you blend nuts for too long, you release more oils and you will eventually turn those nuts into nut butter! One way to avoid this is to keep your eye on your food processor and make sure you shut your food processor off right when you notice that larger nut chunks are all ground up.




CHOCOLATE COCONUT ENERGY BALLS

Make snack time easy this week and make a batch of these easy coconut chocolate energy balls for a healthy meal prep snack throughout the week. These delicious energy balls are no bake, easy to make, and taste like an almond joy. Does it get any better?

Ingredients

  • 1/2 cup dates , chopped (90 gm)

  • 1/2 cup desiccated coconut (50 gm) Extra for rolling

  • 1/2 cup rolled oats powder (45 gm)

  • 1/4 cup dark chocolate melted , I use 85% cocoa with minimal

  • Crumbled roasted almond and Pistachio

  • 1/4 cup protein powder (optional)



Instruction

  • In a bowl, soak your chopped dates with warm water for 10 minutes. Drain and save the dates water.

  • In a food processor or blender add roasted almonds, pistachio oats powder (rolled oats) blend all the ingredients .

  • Then add chopped dated and tablespoon of dates water , desiccated coconut and chopped dark chocolate. Blend until the ingredients are smooth.

  • Check that the mixture is sufficiently moist to be able to roll into balls. if not , then add some dates water.

  • Take additional coconut in to a wide bowl , scoop about a tablespoon and roll into balls.

  • Roll into desiccated coconut. Place in on baking sheet / baking tray and place in the fridge for 15-20 min to set.

  • Store energy balls in the fridge in an airtight container .


NOTES

Store energy balls in an airtight container. I recommend keeping them in the refrigerator to firm and maintain freshness.
