Ragi Malt or Ragi Ambli is a popular healthy drink made in Karnataka during summer to hydrate and cool down bodies. It is made using ragi powder and buttermilk and is a perfect drink to sip on warm summer days. It can also be given to babies from 6 months onwards and it is very healthy for them. Here is how to make it.



Ragi Buttermilk - an easy and cooling drink made with ragi/nachni/finger millet and curd/yogurt. It's a best refreshing summer drink for every age group as it keeps the body cool and keep them hydrated. Ragi or finger millet is one such millet that has been used abundantly to make healthy, fibre-rich and protein-rich recipes that may be especially beneficial for those suffering from high blood pressure and high blood sugar. Ragi is also replete with many vital minerals and vitamins.

Ragi can be cooked in numerous ways, including in rotis or parathas, dosas and even desserts like ladoos, burfis and even cakes and muffins. But did you know that you can even drink ragi? A South-Indian favorite made from cooked sprouted ragi flour is the ambali or the savoury ragi malt.


Ambali or ragi malt is a vegetarian summer drink or porridge that is prepared in Karnataka. The drink is prepared by cooking ragi flour in water and then cooling it down and then adding diluted beaten curd or buttermilk to it, along with cumin powder, salt


Ingredients

  • Ragi Flour - 2 tbsp

  • water - 2 cups

  • Curd/Yogurt/Dahi - 1 cup

  • Coriander leaves- 1 tbsp chopped

  • Salt - as required

  • Jeera/cumin seed powder - 1/4 tsp

  • Grated ginger 1/2 tsp



Instructions

  • Add in 1/2 cup of water and mix it well. Make sure there are no lumps left out.

  • Next keep remaining 1.5 cups of water for boiling ,add cumin powder ,salt and ginger paste.

  • When the water starts boiling add in ragi batter .

  • Bring it to boil and continue boiling under low flame for 5 minutes by stirring continuously.

  • Switch off the stove and wait until completely cool.

  • Take curd in a bowl and beat the curd well with a whisk. Then add 1 cup of water with salt and beat again until frothy.

  • Once the cooked ragi flour is cooled down, add the prepared buttermilk to it. Mix it very well.

  • Then add chopped coriander leaves and the tempering items. Mix everything together once again.
