Pizza Pinwheels Recipe|Crusty homemade pizza gets a new look in these bite-sized pizza wheels loaded with chickpeas and veggies. I think it’s worth it to spend a little extra time on prep to really punch up the nutrition in these cheesy little buns.


They look beautiful and taste fantastic—talk about a winning combination! These pretty pizza snacks are easy appetizers, but you could also serve them with a salad for a special lunch



To start, we make our own pizza dough using whole wheat flour. Then we packed in veggies and boiled chickpeas for lots of vitamins, minerals, fiber and protein .

You can really use any veggies you like, or have on hand.


I love pizza , but I rarely ate it because it’s not the healthiest option and always made me feel sluggish and low energy after. But now…With the help of pre-made whole wheat (or even sprouted wheat) pizza dough, and toppings like veggies and chickpeas or kidney beans I have created an awesome recipe for healthy homemade pizza bites that is guaranteed to please even the pickiest pizza lover in your family!


Ingredients

  • Wheat flour 2 cups

  • Dry instant yeast 1 tbsp

  • Sugar 1/2 tsp

  • Salt 1/2 tsp

  • Mixed herbs 1/2 tsp

  • Lukewarm water

Toppings

  • Cheese as per your choice (mozzarella or regular )

  • Bell papers (vegetables of your choice like corn , olives , zucchini ,spinach etc

  • Boiled Chickpeas or boiled kidney beans mixture (boiled smashed chickpeas mixed with coriander , salt , mixed herbs , red chilli and olive oil )



Instruction

  • Stir together warm water, yeast, and sugar. Let activate for 10 minutes – it should become foamy.

  • Stir in oil and salt. Mix in 1/2 cup flour at a time.

  • Knead (using your hands )until it forms a cohesive ball. It will still be a little sticky but you should be able to pick it up as one piece. If it's far too sticky, add 1-2 more tablespoons of flour at a time until it comes together.

  • Continue to knead for 5 minutes.

  • Place the ball of dough into a large greased bowl. Cover with a towel and let rise in a warm location for 2 hour or until doubled in size.

  • Punch the dough down. Use some flour to bring it together into a not too sticky flat disc, then roll it out larger rectangle. You want to keep the dough.

  • Spread the filling on the dough, keep a half inch from the edges. (pizza sauce , chickpeas , veggies and cheese)

  • Roll, tightly, seal the edge. Slice with a sharp knife, thread, Grease a baking dish and place the rolls a quarter inch apart. Cover and let rise for 20 mins. Preheat the oven to 400 deg F (205 C)

  • Spray oil on the rolls and bake at 400 deg F for 22 to 25 mins. Check the center roll, if it is still doughy then bake for another few mins if needed.

  • Garnish with pepper flakes and fresh herbs. Serve hot as is or with some marinara on the side.

To store, store refrigerated for up to 5 days and freeze for up to a month.

This recipe is simple, and you can add in your favorite ingredients. If u have cravings to eat pizza then don't stop yourself .This is healthy treat for pizza lovers .
